Sundae (순대) is a Korean sausage made by filling and cooking an animal intestine. Many first-time visitors meet it at a market stall, snack shop or soup restaurant. It can be a simple sliced plate, or part of sundae-guk, a hot soup. Ask about ingredients before ordering: fillings, offal, spice and portion size change by shop.
The Encyclopedia of Korean Culture describes sundae as stuffed and boiled or steamed intestine. Pork intestine is common, but not universal. This guide helps you order; it does not identify a dish as vegetarian, halal or allergy-safe.
What may be in it?
| Version | What to expect | Ask before ordering |
|---|---|---|
| Snack-style sundae | often glass noodles in a pork casing | whether it has blood, pork or offal |
| Sundae-guk | soup with sundae and possible offal | whether offal can be left out |
| North Korean-style | more rice, blood, greens and vegetables | exact filling and spice level |
| Regional sundae | local recipe may differ greatly | ingredients and portion size |
There is no single universal filling. The Korean Food Promotion Institute lists pork intestine, pork, blood, glass noodles, cabbage, onion, chives and salted shrimp among ingredients for Baegam sundae, but that is not a menu guarantee for another shop. Official Korean food material. North Korean-style sundae can emphasize glutinous rice, blood, greens and vegetables; the institute’s guide contrasts it with noodle-centred snack sundae.
Four phrases that make a first order easier
| Need | Korean | Pronunciation | Meaning |
|---|---|---|---|
| Sundae han jeopsi juseyo | One plate of sundae, please. |
| Sundaet-guk hana juseyo | One sundae soup, please. |
| Naejang ppaego ganeunghalkkayo? | Could you leave out the offal? |
| Eotteon jaeryoga deureogayo? | What ingredients are in it? |
| Han jeopsineun myeot myeongi meogeul su isseoyo? | How many people can share one plate? |
| Maeun yangnyeomeun ttaro juseyo | Please serve spicy seasoning separately. |
| Jeoneun saeu allergy-ga isseoyo. Saeujeosina saeuga deureoganayo? | I have a shrimp allergy. Does it contain salted shrimp or shrimp? |
Use the ingredient question before asking for changes. “No offal” usually asks to omit accompanying offal or soup offal; it does not remove the sausage casing itself. Portion and separate-sauce requests depend on the vendor. If shared utensils or cross-contact cannot be answered clearly, do not eat the dish.
Plate or soup?
A plate gives you a direct first taste and makes sharing easy. Sundae-guk is better when you want a full warm meal, but it may have a stronger broth and additional offal. Choose the plate if you are unsure about texture; choose soup if you have already confirmed the ingredients and want a filling meal. Do not assume a side dish such as salted shrimp will be present, or that it is suitable for an allergy.
Regional versions are another reason to ask. Byeongcheon sundae is associated with Byeongcheon, Cheonan, and is described with bean sprouts, greens, glutinous rice and blood. Encyclopedia entry. Abai sundae is associated with Sokcho and a Hamgyeong-style filling that can include pork large intestine, rice, millet, blood and vegetables. Encyclopedia entry. These descriptions explain traditions; they do not replace the vendor’s answer about today’s batch.
A calm first-order routine
- Read the menu or point to the item.
- Ask what ingredients are in it if you have any restriction.
- Ask whether offal can be omitted only after the vendor confirms the dish.
- Order a plate or one soup. Check the shop’s portion convention.
- Taste a small amount before adding seasoning.
Market ordering can feel fast, but a short ingredient question is normal and useful. For more practical market ordering context, see our Mangwon Market guide.
